When Ekstedt wanted to meet Bourdain.
Met Niklas today and of course, we ended up talking a lot about restaurants. Lots of San Sebastian, a bit of Per Se and plenty of Mathias Dahlgren. And Noma. Wasn’t René head chef at Restaurant Niklas when the young Ekstedt opened in Helsingborg? They got to know each other when they both worked in Copenhagen.
The plan was for René to work for Keller at French Laundry but something happened so instead he took up Niklas's offer and headed off to Helsingborg. Don't know if Swedish foodies understood exactly how good Niklas's restaurant in Skåne was back then, with first René then Benny Cederberg in the kitchen in the early years.
Niklas also spoke about when he was at Les Halles in New York, which is more famous than good. Niklas was eager to meet the much talked about Kitchen Confidential chef and simply asked the young waitress if Mr Bourdain was around. You would think that there were two simple answers to that question. Yes. Or no. But, this girl came up with a totally unexpected answer: Who? A second later a superior was present, he cleared his throat, apologised and told the entire story. Charming. And slightly touching, don't you think? Why do you have to know the name of your boss? Finally: Great that Mistral is opening again, this time in Gamla Enskede. Thanks! (The picture with me and Bourdain is from Arzak, March 2008).
